Tomato Soups With Rice & Coriander

 To Serve: 4
               Cooking  time:10 minutes
                Calories per serving:110

    Ingredients
               1tbsp oil(preferable olive oil); 1 large onion, chopped; 1 tbsp corn flour; 2tbsp tomato puree; 750gm ripe tomatoes, cut into quarters; 100ml milk(low fat); 450ml vegetable stock; 4tbsp cooked rice (preferably brown); 1tbsp chopped fresh coriander ; salt  to taste & freshly ground black pepper to taste.
     Method
               1.Place oil and onion in a large bowl and cover and cook for 4 minutes on HIGH power.
               2.Stir in the corn flour (mixed in cold water) tomato puree, tomatoes, salt,coriender and peppe. Add milk, cover and cooked on MIDUM power for 5 minutes , stirring halfway through cooking.
               3. Add the hot stock and allow to cool slightly. Blend the soup. Sieve the soup and stir in the cooked rice.
                4. Reheat the soup uncoverd for 3 -4 minutes on HIGH power. Add the seasonings to taste.
                5.Serve the soup sprinkled with chopped coriender.
